Tomato Bruschetta

Ingredients

  • 8 thick slices of Cottage Lane Ciabatta
  • 1-2 clove/s garlic, cut in half
  • Sea salt

For the tomatoes:

  • 2 cups mixed cherry tomatoes, cut in half
  • ¼ cup basil leaves, roughly chopped + extra for garnish
  • 1 clove garlic, crushed
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar

The timeless and delicious combination of tomato, garlic and basil goes perfectly with our fresh, crusty ciabatta.

  • 8 thick slices of Cottage Lane Ciabatta
  • 1-2 clove/s garlic, cut in half
  • Sea salt

For the tomatoes:

  • 2 cups mixed cherry tomatoes, cut in half
  • ¼ cup basil leaves, roughly chopped + extra for garnish
  • 1 clove garlic, crushed
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar

Place the cherry tomatoes in a bowl with the basil, crushed garlic, olive oil and balsamic vinegar. Season with salt and toss to coat. Leave to marinate at room temperature for at least 30 minutes.

Brush both sides of the ciabatta slices with olive oil and place on a hot grill. Toast until golden and lightly charred. Remove from the grill and rub the cut side of the garlic cloves over each slice of bread.

Load the ciabatta toasts up with the marinated tomatoes, finish with some extra basil leaves and a pinch of flakey sea salt. Serve immediately.
